How to make it

  • Preheat oven to 350 degrees.
  • Beat first 4 ingredients at low speed until cake is moistened.
  • Beat at med. speed 4 minutes.
  • Pour into 2 greased and floured 9" round cake pans.
  • Bake at 350 degrees for 18-20 minutes or until toothpick inserted in center comes out clean.
  • Cool on wire rack 10 minutes; remove from pans.
  • Brush tops of each layer with 2 Tbsp. Strawberry Preserves.
  • Cool completely on wire racks.
  • Beat remaining preserves with whipping cream and powdered sugar at high speed until stiff peaks form.
  • Place 1 cake layer on a serving platter.
  • Arrange 1/2 of strawberries over layer; top with 1/2 whipped cream mixture.
  • Repeat procedure with remaining layer, strawberries and whipped cream mixture.
  • Garnish with extra strawberries.
