New Orleans Shrimp okra And Tomato Saute

- 1 1/4 lbs large uncooked shrimp,peeled and deveined shopping list
- 3 tsp cajun seasoning,divided shopping list
- 6 slices smoked bacon,chopped shopping list
- 3 tblsp all purpose flour shopping list
- 2 cups frozen okra(from 16 oz package)thawed shopping list
- 1 12 ounce container cherry tomatoes shopping list
- 1 8oz bottle clam juice shopping list
- 1/4 tsp all spice shopping list
- 2 green onions, chopped shopping list
How to make it
- Toss shrimp and 1 1/2 tsp Cajun seasoning in med bowl to coat
- Cook bacon in large non stick skillet over med-high heat
- until crisp and brown
- using slotted spoon,transfer bacon to papertowel to drain.
- add flour ro drippings in skillet,stir constantly till roux is very dark brown,about 5 min
- add okra and cherry tomatoes,stir in remaining 1 1/2 tsp Cajun seasoning cook 1 min.
- add clam juice and all spice
- boil until saauce is thick,stirring often,about 3 min
- add shrimp.
- saute shrimp until opaque in center about 5 min
- Season to taste with salt and pepper
- Mix in choped green onions and cooked bacon
- serve
