Asian Amonds Recipe
I make these for gifts all the time. They have a sweet, spicy, exotic nutty crunchinees that is perfect with drinks and cards in the evening. Addictive!

Ingredients
  • 3 tablespoons peanut oil, or canola
  • 2 cups whole almonds
  • 1/2 cup sugar
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon cayenne pepper
  • 1 tablespoon sugar

Directions
  1. Heat oil in a heavy skillet (cast iron) over medium-high heat. Add the almonds and sprinkle with 1/2 cup sugar. Saute until the almonds become golden brown and the sugar caramelizes, stirring constantly.
  2. Remove almonds from the pan and toss in a bowl with the salt, cumin, cayenne and remaining sugar. Immediately spread over foil to cool. Break nuts apart using two forks. Store in airtight container in refrigerator.

Sounds very good but they must be hotter then heck with that cayenne pepper? ... or does the sugar tone down the spicy heat? Thanks for the post.


They're really not that hot, but my-0-my are they good! And I LIKE spicy! And yes, the sugar does take some of the heat away. Try them, you'll like them.
