How to make it

  • Line a 20cm pan with grease paper and grease the paper lightly.
  • Heat up the oven to 170 C.
  • Stir together sugar, flour, cocoa powder, baking soda, baking powder and salt in a large bowl.
  • Add eggs, buttermilk, strong black coffee, vegetable oil and vanilla extract.
  • Beat on medium for about 2 minutes.
  • Pour the batter into prepared pan.
  • Bake for 110-120 minutes.
  • Cool onto wire rack before proceeding to the next steps.
  • To make the stewed berries, add sugar and a little water to berries in a saucepan and stew untill the syrup is thickened.
  • DO NOT add too much water as the berries will have their own juices.
  • Add lemon juice from 1/2 lemon.
  • Leave to cool.
  • Add the stewed berries/cherries to whipped cream.
  • Half the cake to get two layers. Spread the stewed berries evenly across one layer and top the layer with the other cake layer. Refrigerate awhile till the cream is set before serving.
  • Another alternative is to simply spread the stewed berries/cherries onto the cake before serving, garnishing with chocolate-dipped berries/cherries.
