How to make it

  • Beat eggs
  • Add oil, sugar, zucchini, and vanilla
  • Mix dry ingredients
  • Combine the two mixtures
  • Grease muffin tins or line with paper baking cups
  • Bake at 375 for 20 minutes

    I know what u mean!!! This is what we do with ours!! Last summer I had fried Zucchini which was really good, but I haven't tried to make it myself - maybe this summer!

    Zucchini bread is a classic! Great post and a great way to use up those baskets full of zucchini that our neighbors pass our way every year :). Everyone grows it, but no one knows what to do with it. Why is that? :)
