My Sisters Zucchini Bread

This is a yummy recipe for Zucchini bread or muffins that my sister has passed on to me. Its so delicious - you can hardly tell its made with a vegetable. These muffins can be made ahead and frozen!
Ingredients
- 3 eggs shopping list
- 1 cup vegetable oil shopping list
- 1 1/2 cups sugar shopping list
- 2 cups grated zucchini shopping list
- 2 tsp vanilla shopping list
- 2 cups flour shopping list
- 1/4 tsp baking powder shopping list
- 2 tsp baking soda shopping list
- 3 tsp cinnamon shopping list
- 1 tsp salt shopping list
How to make it
- Beat eggs
- Add oil, sugar, zucchini, and vanilla
- Mix dry ingredients
- Combine the two mixtures
- Grease muffin tins or line with paper baking cups
- Bake at 375 for 20 minutes

Zucchini bread is a classic! Great post and a great way to use up those baskets full of zucchini that our neighbors pass our way every year :). Everyone grows it, but no one knows what to do with it. Why is that? :)
