Holy COWZ! This is done completely in the MICROWAVE and will wow your friends and family. Completely versatile. You can add just about anything squash, carrots, spinach, or pine nuts.

Ingredients
  • 1/2 cup uncooked Couscous
  • 1 tbsp. Extra Virgin Olive Oil
  • 1 tsp. dill
  • 1 dash of each dried herb: oregano, basil, and thyme
  • 1 handful sliced baby bellas or sliced white mushrooms
  • 1/2 cup water
  • Optional: crumbled goat, bleu, or feta cheese or manzanilla or kalamata olives

Directions
  1. First, "sautee" mushrooms in the 'wave with the EVOO, a tiny sprinkling of each herb to season. Just stick these babies in there for about a minute and it will sautee them just fine. Add dry couscous and water and the remainder of the herbs. Heat for about 3 minutes. If still slightly crunchy, add some more water and pop back in for about 30-45 seconds. Fluff! Add any random extras you may like. I really like some green olives and goat cheese. This literally takes more time to gather your ingredients from the pantry than it does to cook. Easy!!!
