This is a great recipe for leftover turkey after the holidays. My mom always made it after Thanksgiving dinner with the leftover carved turkey bones... its a great childhood memory of mine, and I could never wait till it was done!

I usually simmer my carcass for a few hours longer and then stick the broth in the fridge for a few hours so that I can scrape the fat off when it is in its congealed state. Otherwise, sounds good!
