I discovered this dish while visiting Chile in 2008. It's quick and easy, but requires some timing to get all the ingredients finished at the same time so that everything is nice and hot on the plate!

Ingredients
  • 2 Beef Fillets
  • 6 Long Potatoes
  • 2 Medium Onions
  • 5 Large Eggs
  • Salt and Pepper

Directions
  1. Wash and peel potatoes
  2. Slice potatoes into french fries
  3. Season fries with salt
  4. Slice beef into short fajita style slices (1 to 2 inches long)
  5. Chop onion
  6. Begin deep-frying seasoned potatoes (this takes the longest) make sure they are brown, but still soft.
  7. Season and begin sauteing onions
  8. Scramble and fry eggs
  9. Saute beef
  10. Be sure to time these steps so they all finish at about the same time, or place finished ingredients in a 250ยบ to keep warm.
  11. Place ingredients in a bowl beginning with the French Fries, then the onions, then eggs, and beef on top.
  12. ENJOY!
