Mojo Barbequed Chicken

- 2 tablespoons grated lime zest shopping list
- 1/4 cup lime juice shopping list
- 1/4 cup orange juice shopping list
- 2 tablespoons chopped fresh mint shopping list
- 1 tablespoon honey shopping list
- 2 garlic cloves minced shopping list
- 2 teaspoons olive oil shopping list
- 1 teaspoon ground cumin shopping list
- 1/2 teaspoon salt shopping list
- 3-1/2 pound chicken cut into 6 pieces with skin removed from all but wings shopping list
- 1 lime cut into wedges shopping list
- Fresh mint sprigs shopping list
How to make it
- Combine lime zest and juice, orange juice, mint, honey, garlic, oil, cumin and salt in small bowl.
- Transfer half the lime mixture to a covered container and refrigerate.
- Transfer remaining lime mixture to a large plastic bag and add chicken.
- Squeeze out air and seal bag then turn to coat the chicken.
- Refrigerate turning bag occasionally at least 2 hours or up to overnight.
- Remove chicken from marinade then scrape off and discard excess marinade.
- Spray grill rack with nonstick spray then preheat grill to medium.
- Place chicken on grill rack and grill turning occasionally until cooked through about 30 minutes.
- Pour reserved lime mixture into a small saucepan and bring to a simmer.
- Transfer chicken to a platter and spoon warm lime sauce on top.
- Garnish with lime wedges and mint sprigs.
- Remove skin from wings before eating.
