This is not only healthy, but very tasty. My friend Jo Beth made this for us this past weekend and it was incredible. I will make this again and again, so moist, juicy and bursting with incredible flavors. Enjoy

Ingredients
  • 2 tablespoons grated lime zest
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 2 tablespoons chopped fresh mint
  • 1 tablespoon honey
  • 2 garlic cloves minced
  • 2 teaspoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 3-1/2 pound chicken cut into 6 pieces with skin removed from all but wings
  • 1 lime cut into wedges
  • Fresh mint sprigs

Directions
  1. Combine lime zest and juice, orange juice, mint, honey, garlic, oil, cumin and salt in small bowl.
  2. Transfer half the lime mixture to a covered container and refrigerate.
  3. Transfer remaining lime mixture to a large plastic bag and add chicken.
  4. Squeeze out air and seal bag then turn to coat the chicken.
  5. Refrigerate turning bag occasionally at least 2 hours or up to overnight.
  6. Remove chicken from marinade then scrape off and discard excess marinade.
  7. Spray grill rack with nonstick spray then preheat grill to medium.
  8. Place chicken on grill rack and grill turning occasionally until cooked through about 30 minutes.
  9. Pour reserved lime mixture into a small saucepan and bring to a simmer.
  10. Transfer chicken to a platter and spoon warm lime sauce on top.
  11. Garnish with lime wedges and mint sprigs.
  12. Remove skin from wings before eating.
