Hot Fennel Cheese Dip Recipe
This is a variation on the more common hot artichoke dip. Friends say they like this one better! Enjoy with your favorite crackers, pita chips, whatever!

Ingredients
  • 4 slices bacon, drained and crumbled
  • Save 1 tablespoon bacon grease.**
  • 3 medium fennel bulbs, clean and sliced paper thin
  • 2 cloves garlic, minced (or more!)
  • 8 ounces mayonaise (not Miracle Whip)
  • 8 ounces light sour cream
  • 4 ounces Gorgonzola cheese
  • salt and pepper to taste
  • Topping:
  • 1/4 cup freshly shredded Parmesan cheese
  • 2 tablespoon finely chopped nuts (or Panko if preferred)
  • **Use olive oil if desired

Directions
  1. Saute fennel slices and garlic in bacon drippings or olive oil
  2. Mix sauted veggies with mayonaise, sour cream, Gorgonzola cheese, salt and pepper.
  3. Pour mixture in an 8 inch round ceramic baking dish (like the Pampered Chef dish)
  4. Top with Parmesan cheese mixture.
  5. Bake at 400 degrees for 15-20 minutes
