Maple Glazed Carrots With Pistachios Recipe
This is a quick and easy way to serve carrots to those special guests and family members! Look attractive on the table. Makes enough for a large family or group.

Ingredients
  • 3 16 ounce bags of baby carrots
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1/2 cup maple syrup
  • 1/2 cup toasted pistachios

Directions
  1. Cook carrots in water until tender crisp, about 8-10 minutes.
  2. Drain carrots and return to pot.
  3. Add butter and salt. Cook over medium heat until carrots are glazed.
  4. Add syrup and heat until boiling. Boil 2 minutes, stirring frequently,
  5. Pour into serving dish.
  6. Top with toasted pistachios.
  7. Serve immediately.

I like the idea but don't like to boil veggies; especially carrots since much of the flavor and nutrition go out with the water. I do a similar recipe at the restaurant, roasting the carrots and using slivered almonds.
