How to make it

  • Cook carrots in water until tender crisp, about 8-10 minutes.
  • Drain carrots and return to pot.
  • Add butter and salt. Cook over medium heat until carrots are glazed.
  • Add syrup and heat until boiling. Boil 2 minutes, stirring frequently,
  • Pour into serving dish.
  • Top with toasted pistachios.
  • Serve immediately.

    I like the idea but don't like to boil veggies; especially carrots since much of the flavor and nutrition go out with the water. I do a similar recipe at the restaurant, roasting the carrots and using slivered almonds.
