I had some mushrooms to use up to I made this soup that is really tasty and not as rich as normal mushroom soup.

Ingredients
  • 2 tsp. olive oil
  • 2 Cups small white mushrooms, sliced
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1/3 Cup apple juice
  • 1 Can chicken broth
  • 1/2 Cup milk
  • 3 Tbsp heavy cream
  • dill, thyme and pepper to taste.

Directions
  1. Heat the oil in a pot. Cook onion and mushrooms until tender, about 5 minutes. Add garlic.
  2. Pour in apple juice and turn up heat to evaporate some of it, about three minutes.
  3. Add broth and bring to boil. Cook until all mushrooms are soft.
  4. Remove pot from heat. Add milk, cream and spices.
