Paprika Chicken Recipe
This chicken makes a fabulous gravy that can be served over rice or mashed potatoes.

Ingredients
  • 1 fryer chicken-cut into pieces
  • 2 teaspoons salt-or to taste
  • 2 teaspoons black pepper-or to taste
  • 1 teaspoon garlic powder-or to taste
  • 2 tablespoons paprika(sweet,smoked,or spicy)-divided
  • 1 small can sliced mushrooms-undrained
  • 1/3 cup water
  • 2 teaspoons cornstarch

Directions
  1. Preheat oven to 350 degrees.
  2. Season chicken pieces with salt,pepper,garlic,and 1 tablespoon paprika.
  3. Refrigerate at least 4 hours.
  4. Place chicken in a greased cast iron skillet.
  5. Sprinkle with remaining tablespoon of paprika.
  6. Bake for 1 hour or until juices run clear.
  7. Remove skillet from oven. Remove chicken from skillet and keep warm.
  8. Place skillet with pan drippings on stovetop over medium high heat and add mushrooms.
  9. Combine water and cornstarch and pour into skillet.
  10. Bring to a boil,stirring constantly until thickened. Season with additional salt and pepper if needed.
  11. Add chicken. Coat well with gravy.
  12. Serve hot with rice,mashed potatoes,or biscuits.
  13. Note:
  14. If the chicken does not produce enough juice for gravy or gravy is too thick, add a little water or chicken broth and season to taste.
