These muffins are great for those who don't like stuff that's overly sweet. Kamut is an ancient grain from Egypt with a nutty flavor (you can get Bob's Red Mill Kamut flour at most grocery stores). Makes 1 dozen muffins.

Ingredients
  • 1.5 C kamut flour
  • 2 T baking powder
  • 1 tsp sea salt
  • 1 C dried cranberries
  • 2 tsp orange zest
  • 1/2 C vegetable oil
  • 1/2 C honey
  • 2 lg eggs, lightly beaten
  • 3/4 C buttermilk

Directions
  1. Preheat oven to 350 degrees F, liberally oil muffin tin for 12 muffins.
  2. In a large bowl, mix together dry ingredients and cranberries.
  3. Add oil, honey, eggs and buttermilk.
  4. Stir until just moistened.
  5. Pour into well-oiled muffin tins.
  6. Bake at 350 degrees F for 15 - 20 minutes or until toothpick comes out clean.
