Ingredients
  • 6 each 8 ounce Chicken Breasts Skin on
  • 3 pounds broccolini, rinsed and trimmed
  • 6 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 1/2 teaspoon kosher salt
  • 1 cup panko bread crumbs

Directions
  1. Spread the panko into on a 1/2 sheet pan and place into the oven for 2 minutes at 425 degrees, or until lightly toasted.
  2. Trim the broccolini stems to a 4 inch length. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, and kosher salt.
  3. Add the panko to the bowl with the broccolini mixture.
  4. Toss to combine.
  5. Return the mixture to the pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes.
  6. While broccolini is roasting, cook chicken breast on a flat top grill, or in a large skillet on the stove top, with olive oil and no seasoning (remember, it's naked).
  7. Slice Chicken breasts lengthwise.
  8. Plate 2 ounces Broccolini and place 2 ounces of Chicken on top.
