Naked Chicken with Broccolini

- 6 each 8 ounce chicken breasts Skin on shopping list
- 3 pounds broccolini, rinsed and trimmed shopping list
- 6 tablespoons olive oil shopping list
- 6 cloves garlic, minced shopping list
- 1 1/2 teaspoon kosher salt shopping list
- 1 cup panko bread crumbs shopping list
How to make it
- Spread the panko into on a 1/2 sheet pan and place into the oven for 2 minutes at 425 degrees, or until lightly toasted.
- Trim the broccolini stems to a 4 inch length. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, and kosher salt.
- Add the panko to the bowl with the broccolini mixture.
- Toss to combine.
- Return the mixture to the pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes.
- While broccolini is roasting, cook chicken breast on a flat top grill, or in a large skillet on the stove top, with olive oil and no seasoning (remember, it's naked).
- Slice Chicken breasts lengthwise.
- Plate 2 ounces Broccolini and place 2 ounces of Chicken on top.
