How to make it

  • Spread the panko into on a 1/2 sheet pan and place into the oven for 2 minutes at 425 degrees, or until lightly toasted.
  • Trim the broccolini stems to a 4 inch length. Place the broccoli into a mixing bowl and toss with the olive oil, garlic, and kosher salt.
  • Add the panko to the bowl with the broccolini mixture.
  • Toss to combine.
  • Return the mixture to the pan, place in the oven and roast just until the broccoli is tender, 8 to 10 more minutes.
  • While broccolini is roasting, cook chicken breast on a flat top grill, or in a large skillet on the stove top, with olive oil and no seasoning (remember, it's naked).
  • Slice Chicken breasts lengthwise.
  • Plate 2 ounces Broccolini and place 2 ounces of Chicken on top.
