Cantaloupe Mousse

- Note: You will need a very nice ripe cantaloupe for this recipe. shopping list
- 2 Tablespoons (2 packages)unflavored gelatin shopping list
- 1/3 Cup apricot (or) orange juice shopping list
- 1/4 Cup Curacao (a) orange liqueur shopping list
- 1 about 2-1/2 or 3 Pound Ripe cantaloupe,peeled and chunked shopping list
- 3 Tablespoons sugar shopping list
- 2 Tablespoons lemon juice shopping list
- 1/3 Cup plain yogurt shopping list
How to make it
- Place the gelatin in a small saucepan,and pour in the Juice and let set a few minutes to soften.
- Add the Curacao and stir over low heat until the gelatin is completely dissolved.
- In a blender or food processor,puree the melon with the sugar and lemon juice.
- Pour in the gelatin mixture through the feed tube while the motor is running.
- Blend in the yogurt.
- Spoon the mousse into a bowl and refrigerate several hours or overnight,until well set.
- Serve in sherbet glasses.
