For a very low calorie dessert

Ingredients
  • Note: You will need a very nice ripe cantaloupe for this recipe.
  • 2 Tablespoons (2 packages)unflavored gelatin
  • 1/3 Cup Apricot (or) Orange Juice
  • 1/4 Cup Curacao (a) Orange Liqueur
  • 1 about 2-1/2 or 3 Pound Ripe Cantaloupe,peeled and chunked
  • 3 Tablespoons Sugar
  • 2 Tablespoons Lemon Juice
  • 1/3 Cup Plain Yogurt

Directions
  1. Place the gelatin in a small saucepan,and pour in the Juice and let set a few minutes to soften.
  2. Add the Curacao and stir over low heat until the gelatin is completely dissolved.
  3. In a blender or food processor,puree the melon with the sugar and lemon juice.
  4. Pour in the gelatin mixture through the feed tube while the motor is running.
  5. Blend in the yogurt.
  6. Spoon the mousse into a bowl and refrigerate several hours or overnight,until well set.
  7. Serve in sherbet glasses.
