Nut Crunchy Salad

Interesting play of textures, crisp celery, crunchy nuts and meaty beans. Can make a day ahead. Goes well with Enchiladas or Viva La Chicken. Or by itself!
Ingredients
- 1 can (about 1 lb.) red kidney beans shopping list
- 2 cups chopped celery shopping list
- 1 TBS minced onion shopping list
- 1/2 cup chopped walnuts shopping list
- 4 small sweet pickles, chopped shopping list
- Dressing: shopping list
- 1/4 cup salad oil shopping list
- 3 TBS wine vinegar shopping list
- 1/2 tsp each salt and pepper shopping list
- lettuce if you wish shopping list
How to make it
- Drain beans thoroughly.
- Combine with celery, onion, nuts, and pickles.
- Mix dressing ingredients.
- Pour over bean-celery mixture and toss.
- Serve on lettuce or not.
