Ingredients

4 lg boneless, skinless chicken breast halves

1 16 oz can of spinach

12oz shredded mozzarella cheese

4tbsp of grated parmesan cheese

butter

8 mushrooms helved

4 tsp garlic pepper salt

Directions

Preheat oven to 375 degrees. Butterfly chicken breast halves and place opened in baking dish. Sprinkle chicken with your favorite seasoning. Put a layer of spiach, and mozzarella cheese on the bottom part of each chicken breast. Fold the top of the breast over the filling, and place a toothpick at the edge to keep it closed. Top the closed chicken with garlic pepper salt , remaining cheese and spinach, and parmesan cheese. Cover with foil and bake at 375 for 40 minutes. Remove foil and bake until cheese browns lightly. Let cool about 10 minutes before serving. I like to add a little parsley on top to make it look prettier.
