Black Bean And Corn Salad Recipe
Another great salad recipe, use fresh corn when available! Allow to chill 2 hours before serving on the salad greens. I use arugula and romaine lettuce for the greens.

Ingredients
  • 1½ tablespoons minced fresh cilantro
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (8-ounce) can baby corn, rinsed and drained
  • ½ cup chopped tomato
  • ¼ cup diced peeled avocado
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped seeded jalapeno pepper
  • 4 cups salad greens

Directions
  1. Whisk together first 6 ingredients in a large bowl;
  2. Stir in next 6 ingredients (up to and including jalapeno peppers). Cover and chill 2 hours.
  3. Serve over salad greens.

Yesterday, while at the grocery store, I was trying to remember what went into a Black Bean & Corn salad (Black & Gold Salad...) so I could buy the ingredients....
This one sounds much better than my original one! Thanks, Grandma :)
