Ingredients
  • 1 can cream of coconut (15 or 16 oz.)
  • 1 can crushed pinapple (15 oz.) - undrained
  • 1 cup orange juice
  • 1/4 cup light rum

Directions
  1. In a blender container or food processor, combine all ingredients.
  2. Cover and process until nearly smooth. Pour into a 2 qt. baking dish.
  3. Cover and freeze about 4 hours.
  4. Break sherbet into pieces. Place about half at a time in a blender or food processor. Cover and process until fluffy (or place in a chilled bowl and beat with an electric mixer until fluffy.)
  5. Return mixture to pan.
  6. Cover and freeze about 4 hours until firm.
  7. Makes 4 cups.
