Ingredients
  • 2 Lbs. beef round steak, top or bottom (about four steaks)
  • 2 Tsp. salt
  • 1 Tsp. black pepper
  • 1/2 Tsp. onion powder
  • 1/2 Tsp. garlic powder
  • 3/4 C. all-purpose flour
  • 1/4 C. bacon fat (or Veg. oil)
  • 3 C. Beef broth/bullion
  • 1 Tsp. dried thyme
  • 10 Inch Skillet
  • 9X13" baking pan

Directions
  1. Preheat oven to 325 deg.
  2. Trim steaks of excess fat.
  3. preheat fat or oil over med-high heat in 10 in. skillet.
  4. Put flour on a paper plate, or something to dredge steaks in.
  5. Season both sides of the steaks with the salt, pepper, onion and garlic powder. (Push in gently to "rub")
  6. Dredge meat on both sides in flour, and shake off excess.
  7. Tenderize meat, using a fork, stabbing through every 1/8-1/4".
  8. Dredge in flour again , shaking off excess.
  9. Place in preheated skillet.
  10. Cook until brown on both sides (2 Min.)*
  11. * You can set steaks in the heated pan to rest if there's not enough room in skillet to brown all at once.
  12. Remove all steaks to the pan .
  13. Add the beef broth and thyme to skillet, whisk until boil.
  14. Pour Liquid mix over steaks places in pan.
  15. Make sure all steaks are submerged in the liquid.
  16. Cover pan with foil, place middle rack in oven.
  17. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.
