Garlicky Spinach Salad with Pine Nuts and Raisins

- 1/4c pine nuts shopping list
- 1 garlic clove,finely chopped shopping list
- 1 anchovy fillet,chopped or a good squirt of anchovy paste shopping list
- kosher salt to taste shopping list
- pinch of red pepper flakes shopping list
- 21/2tsp red wine vinegar shopping list
- 3Tbs extra virgin olive oil shopping list
- 6 oz. spinach leaves,trimmed(about 8 cups) shopping list
- 1/4c golden or black raisins shopping list
How to make it
- In a small skillet over medium heat,toast pine nuts,shaking pan and stirring often,until they are barely golden and fragrant,about 3 mins..Pour onto a plate to cool
- Using a morterand pestle,mash garlic,anchovy,a pinch of salt and red pepper flakes into a paste. Transfer to a small bowl. Whisk in vinegar,then slowly whisk in oil.
- Place spinach in a large bowl;add vinaigrette and toss well to combine. Add pine nuts and raisins. Toss once more and serve.

Oh my! I love nothing more than spinach...maybe more than my first born. This sounds amazing;I really like the anchovy in there so salty and the flavor from the pine nuts just puts this one over the top. Straight to the saves!--Kn0x--
