How to make it

  • Cream eggs and sugar.
  • Beat in cheese and vanilla.
  • Mix until smooth.
  • Cut crust from bread and save for another use.
  • Roll bread slices thin.
  • Spread with cheese mixture.
  • Roll up each slice as for a jelly roll.
  • Dip in butter and then roll in sugar,cinnamon mixture.
  • Cut each in half.
  • Freeze.
  • To serve:
  • Bake at 400 degrees for 15 minutes,and serve with sour cream as a dip,adding flavoring to sour cream as you wish or leave plain.
  • Makes 116 blintzes
  • Good cheese treats,economical,and good for a party,because they can be made and kept in the freezer until ready to bake.
