Ingredients
  • 750gm - 1kg fruit such as apples, plums, nectarines, peaches.
  • 150gm wholemeal or plain flour
  • 100gm chilled butter, diced
  • 75gm brown sugar
  • 25gm rolled oats/barley
  • * 1tsp spice such as ground ginger or cinnamon

Directions
  1. Pre-heat oven to 200 C
  2. Place fruit in a 1.5lt ovenproof dish and sprinkle over spice/s if adding this.
  3. Rub butter into flour until it resembles breadcrumbs. Mix in the rolled oats/barley & sugar.
  4. Scatter roughly over the fruit but don't pack it down or it won't be rough and crumbly.
  5. Bake for 35-40 minutes until fruit is soft and the crumble is golden brown.
  6. *Alternative: I always have my fruit stewed up and ready to go. The above quantity of fruit is just a guide. If fruit already stewed then cook for only 20mins (I do mine in convection microwave) and if making a smaller quantity, just freeze the leftover crumble for next time. Trust me, there will be a next time. Stewed rhubarb also works well but of course you'll need to add sugar twhen stewing this.
