Ingredients
  • 2-1/2 cups Water
  • 1-3/4 Cups White Vinegar
  • 2 Tablespoons Sugar
  • 1-1/2 teaspoons Salt
  • 20 Peppercorns
  • 16 Whole Allspice
  • 1(1 pound) Ring of Bologna (Not Sliced)
  • 1 Large Onion,sliced into Rings
  • 1(7-1/2 oz) Jar of Roasted Green Chilies

Directions
  1. Combine water,vinegar,sugar,salt,peppercorns and allspice in saucepan.
  2. Bring to boil.
  3. Reduce Heat.
  4. Cover,simmer 10 minutes.
  5. Remove from heat,cool completely.
  6. Cut bologna into 1/2" pieces.
  7. Layer bologna,onion rings and roasted chilies in large glass casserole.
  8. Pour cooled liquid over top.
  9. Cover and refrigerate 3 days.

Being from the north my husband grew up eating pickled bologna and loved it! I really must show him this one. Thanks for the post!

This I have never heard of. Fried Bologna sandwiches were the only relationship I had with this "meat". I have a lot of questions. But I'm confused about this and need some time. I'll be back.
