This easy fish recipe takes minutes to cook and is delicious, light and healthy. Serve with jasmine rice and some peashoots.

Ingredients
  • 500g red snapper, groupa, sea bass or bream
  • 1/4 c ginger, shred thinly
  • 2 stalks of green onion, sliced
  • 1/4 c fish stock or dashi
  • 1/2 tsp dark mushroom soya sauce
  • 1/2 tsp brown sugar
  • 1 tbsp peanut oil
  • 1/2 tsp pepper
  • 1/2 tsp salt

Directions
  1. Dry the fish with paper towels and marinade with salt and pepper.
  2. In a pan, heat 1/2 tbsp of oil and fry the fish until crispy and golden brown. Remove and set aside on paper towels.
  3. In the same pan, heat remaining oil and saute the ginger and green onion until crispy. Remove from oil.
  4. Add in dark soya sauce and fish stock and let it simmer.
  5. Add in the brown sugar and simmer until the sauce caramelizes.
  6. Pour the sauce over the fish.
  7. Garnish with spring onions, cilantros and ginger shreds.
