How to make it

  • Melt the chocolate and butter together (using the microwave, saucepan, or double boiler)
  • In a large bowl, combine the sugar, flour, salt, and nuts (if desired - I leave them out)
  • Add in the eggs, melted chocolate and butter mixture, water, and vanilla
  • Mix until fully incorporated
  • Place the brownie batter in a 9x13 inch pan and bake at 275 degrees for one hour
  • When the brownies have cooled, cut them up and dust both sides with powdered sugar

    I think that the idea behind the ice water is to give the eggs a little more insurance against cooking when they hit the warm chocolate.

    Also, you left out the really important step of cooking them just a little bit too long so that they're ever-so-slightly crispy around the edges.

    I'm not really sure. The brownies are pretty thin but dense, so maybe the ice water has something to do with that.

    I'm certainly no food scientist :).
