This is always good at my house.. A family favorite.

Ingredients
  • 4 large pork chops, 1 inch thick
  • 1 clove garlic, sliced
  • 3 tablespoons olive oil
  • salt and pepper to taste
  • 1 8oz can tomato sauce
  • 1/2 pound mushrooms, sliced
  • 1 teaspoon parsley flakes
  • 1 teaspoon oregano
  • 2 green peppers, cut in 1 inch strips
  • 8 oz sliced mozzarella chesse

Directions
  1. Preheat oven to 350 degrees
  2. Brown garlic in olive oil in a fry pan; remove garlic.
  3. Add chops, salt and pepper; brown on both sides.
  4. Arrange chops in shallow baking dish.
  5. Mix tomato sauce, mushrooms, seasonings together; pour over pork chops.
  6. Lay green pepper over chops; cover
  7. Bake for 1 hour.
  8. Place cheese over chops and bake 15 minutes longer until cheese melts.
  9. Serve over rice.
  10. May add wine for half the tomato sauce if desired.

I added 1/4 teaspoon of basil to the sauce and served Peso Pasta with it. Poured remainder of sauce on pasta, with portabella mushrooms, dried tomatoes in olive oil and cheese.
