Crispy Crunchy Tuna and Fruit Salad

- 20 ounce can pineapple slices, reserve 2 Tbsp juice shopping list
- 7 ounce can white tuna, drained shopping list
- 11 ounce can mandarin oranges, drained shopping list
- 1 medium cucumber, peeled and diced shopping list
- 1/4 cup chopped green onion shopping list
- lettuce leaves to garnish plates shopping list
- 1 cup mayonnaise shopping list
- 1 Tbsp lemon juice shopping list
How to make it
- Drain the pineapple slices, but keep 2 Tbsp to use in dressing.
- In a medium bowl, break up the large chunks of tuna, then toss with the orange pieces, cucumber, and green onion.
- Line 5 salad plates with lettuce leaves.
- Spoon tuna mixture over lettuce on plates.
- Top each plate with 2 slices of pineapple.
- For dressing, blend together the 2 Tbsp pineapple juice with the mayonnaise and lemon juice.
- Drizzle dressing over each salad portion and serve immediately.
