Grilled Sweet Vidalia Onion and Pepper Pasta

- 2 vidalia onions quartered shopping list
- 2 red bell peppers cored seeded and quartered shopping list
- 1/2 pound fettuccine cooked shopping list
- 2 tablespoons olive oil shopping list
- 2 cloves garlic minced shopping list
- 1/4 teaspoon crushed red pepper flakes shopping list
- 1/2 cup dry white wine shopping list
- 1/2 cup chicken broth shopping list
- 3/4 cups whipping cream shopping list
- 1/3 chopped fresh parsley shopping list
How to make it
- Grill onions and peppers until charred but not burnt.
- Place peppers in a paper bag to cool then remove skins when cool.
- Slice onions and peppers into strips then set aside.
- While pasta cooks heat 2 tablespoons olive oil in large skillet over medium high heat.
- Saute garlic and red pepper flakes for 1 minute.
- Stir in wine, chicken broth and whipping cream.
- Bring to a boil then reduce heat and simmer 3 minutes.
- Stir in onions, peppers and 1/3 cup chopped fresh parsley.
- Toss with drained pasta and serve.
