With all those huge zucchini, of course Aunt Dawn had a zucchini bread recipe!! Servings size is loaves.

Ingredients
  • 1 cup cannola oil
  • 1 3/4 cup sugar
  • 3 cups flour
  • 2tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 3 eggs
  • 2 cups zucchini (shredded)
  • 2 tsp vanilla
  • 1 cup nuts (pecans, walnuts)
  • 1 sm can crushed pineapple (drained)

Directions
  1. Combine sugar & oil
  2. Add eggs 1 at a time mixing well after each
  3. Add vanilla, zucchini and pineapple
  4. Mix dry ingredients and nuts.
  5. divide between loaf pans and bake at 350 for 45-55 minutes
