This is such a nice crunchy zesty salad. I served it along side spaghetti! It took only 10 minutes to make... serves 2 so I doubled the recipe

Ingredients
  • 1 medium tomato, cut into eight
  • 1/3 cup of any colored pepper, julienned
  • 1/2 small cucumber, peeled and thinly sliced
  • 1 small red onion, havled and thinly sliced
  • 2 tablespoons of prepared italian salad dressing
  • 1 medium ripe avocado, peeld and cubed

Directions
  1. In a small bowl, combine the first four ingredients
  2. Add dressing and toss to coat
  3. chill until ready to serve
  4. add avocado, just before serving
