How to make it

  • dice celery and onion
  • cube fish filet
  • melt butter in a 5 Qt stock pot over med heat
  • add celery and onion and saute until lightly browned
  • sprinkle in flour and cook til a rich dark brown ( this may take awhile)
  • squeeze tomatoes to break them up a bit
  • blend in liquid, tomatoes, and cayenne pepper
  • simmer 30 minutes
  • add bay leaves, shrimp, crab, fish, oysters, and okra and continue cooking over low heat for 20 minutes
  • in a seperate pot boil rice until tender and drain.
  • spoon rice into individual bowls and ladle gumbo on top.
  • add hot sauce to taste and enjoy
