SWORDFISH NICOISE ON PASTA

- 5 T. high quality olive oil shopping list
- 2-3 swordfish steaks shopping list
- ½ c. chopped pitted kalamata or nicoise olives shopping list
- 3-4 large tomatoes shopping list
- 6 T. finely chopped flat-leaf parsely shopping list
- 2 T. capers, chopped fine shopping list
- 2 flat anchovy fillet, minced (or 2 t. puree) shopping list
- 2 cloves garlic, mashed into a paste with ½ t. salt shopping list
- 4 T. minced scallion shopping list
- 3 T. balsamic or red-wine vinegar shopping list
- 1 lb. penne or similar pasta shopping list
How to make it
- Boil water for pasta. Grill swordfish steaks and chop into bite-sized pieces. Mix with remaining ingredients (except pasta)
- Cook pasta (in salted water) to just done (al dente) then add sauce and mix.

Mmmmmmm, I love Nicoise ingredients. I just made a big Tuna Nicoise salad on Sunday. We don't get swordfish here frequently, but I will sure try this pasta sauce with tuna! Thank you.
