SWORDFISH NICOISE ON PASTA Recipe

Ingredients
  • 5 T. high quality olive oil
  • 2-3 swordfish steaks
  • ½ c. chopped pitted kalamata or nicoise olives
  • 3-4 large tomatoes
  • 6 T. finely chopped flat-leaf parsely
  • 2 T. capers, chopped fine
  • 2 flat anchovy fillet, minced (or 2 t. puree)
  • 2 cloves garlic, mashed into a paste with ½ t. salt
  • 4 T. minced scallion
  • 3 T. balsamic or red-wine vinegar
  • 1 lb. Penne or similar pasta

Directions
  1. Boil water for pasta. Grill swordfish steaks and chop into bite-sized pieces. Mix with remaining ingredients (except pasta)
  2. Cook pasta (in salted water) to just done (al dente) then add sauce and mix.

Mmmmmmm, I love Nicoise ingredients. I just made a big Tuna Nicoise salad on Sunday. We don't get swordfish here frequently, but I will sure try this pasta sauce with tuna! Thank you.
