How to make it

  • Sift flour and salt into a large bowl and add sugar and egg yolk
  • Pour in beer and mix to a smooth batter
  • Whisk egg whites and fold into batter
  • Fold in spring onion, diced goats cheese and raw apple
  • Season well and drop spoonfulls into very hot oil
  • Take care not to overcrowd
  • Fry until crisp and golden and drain on kitchen paper
  • Serve with sharp sauce

  • Disolve sugar in lime juice
  • Add fish sauce, chilli and water and allow for flavours to infuse for 30 minutes before serving
