Goats Cheese And Apple Fritters Recipe
These wee fritters can be served by themselves or with a 'sharp sauce' They are really tasty and the cheese and apple go so well together. A real Autumn meal.

Ingredients
  • 110 gms plain flour
  • Pinch of salt
  • 30gms caster sugar
  • 2 eggs seperated
  • 115 mls of beer
  • 1 spring onion finely diced
  • 120gms goats cheese diced
  • 2 apples, peeled, quartered and diced
  • salt and pepper to season
  • Ground nut oil to fry in
  • Sharp sauce
  • 10gms of shaved palm sugar or brown sugar
  • Juice of one lime
  • 3Tbsp of fish sauce
  • 1 small red chilli, seeds removed and sliced
  • 1 Tbsp of water

Directions
  1. Sift flour and salt into a large bowl and add sugar and egg yolk
  2. Pour in beer and mix to a smooth batter
  3. Whisk egg whites and fold into batter
  4. Fold in spring onion, diced goats cheese and raw apple
  5. Season well and drop spoonfulls into very hot oil
  6. Take care not to overcrowd
  7. Fry until crisp and golden and drain on kitchen paper
  8. Serve with sharp sauce
  9. Sharp sauce
  10. Disolve sugar in lime juice
  11. Add fish sauce, chilli and water and allow for flavours to infuse for 30 minutes before serving
