Goats Cheese And Apple Fritters

- 110 gms plain flour shopping list
- Pinch of salt shopping list
- 30gms caster sugar shopping list
- 2 eggs seperated shopping list
- 115 mls of beer shopping list
- 1 spring onion finely diced shopping list
- 120gms goats cheese diced shopping list
- 2 apples, peeled, quartered and diced shopping list
- salt and pepper to season shopping list
- Ground nut oil to fry in shopping list
- Sharp sauce shopping list
- 10gms of shaved palm sugar or brown sugar shopping list
- juice of one lime shopping list
- 3Tbsp of fish sauce shopping list
- 1 small red chilli, seeds removed and sliced shopping list
- 1 Tbsp of water shopping list
How to make it
- Sift flour and salt into a large bowl and add sugar and egg yolk
- Pour in beer and mix to a smooth batter
- Whisk egg whites and fold into batter
- Fold in spring onion, diced goats cheese and raw apple
- Season well and drop spoonfulls into very hot oil
- Take care not to overcrowd
- Fry until crisp and golden and drain on kitchen paper
- Serve with sharp sauce

- Disolve sugar in lime juice
- Add fish sauce, chilli and water and allow for flavours to infuse for 30 minutes before serving
