- 1 lb firm tofu, mashed shopping list
- 1/4 tsp turmeric shopping list
- 1 tsp onion powder shopping list
- 1/2 tsp salt shopping list
- 1 1/2 tsp nutritional yeast shopping list
- 1 1/2 c chopped mixed veggies of your choice shopping list
- 1 or 2 medium potatoes, diced (skin on or off) shopping list
- 1/4 c vegetable broth shopping list
How to make it
- Boil potatoes until tender but not completely cooked.
- Drain, toss with olive oil to coat and place in single layer on baking sheet. Broil until golden.
- Add vegetables to a lightly oiled pan over med-high heat, cook for 3 minutes. Add tofu, stir in broth, and increase heat to high. Cook until liquid is almost all absorbed.
- Add remaining ingredients, stir, and cook for 2 minutes.
- Add potatoes, stir, and serve.
