Ingredients
  • 1 lb firm tofu, mashed
  • 1/4 tsp turmeric
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1 1/2 tsp nutritional yeast
  • 1 1/2 c chopped mixed veggies of your choice
  • 1 or 2 medium potatoes, diced (skin on or off)
  • 1/4 c vegetable broth

Directions
  1. Boil potatoes until tender but not completely cooked.
  2. Drain, toss with olive oil to coat and place in single layer on baking sheet. Broil until golden.
  3. Add vegetables to a lightly oiled pan over med-high heat, cook for 3 minutes. Add tofu, stir in broth, and increase heat to high. Cook until liquid is almost all absorbed.
  4. Add remaining ingredients, stir, and cook for 2 minutes.
  5. Add potatoes, stir, and serve.
