How to make it

  • Boil potatoes until tender but not completely cooked.
  • Drain, toss with olive oil to coat and place in single layer on baking sheet. Broil until golden.
  • Add vegetables to a lightly oiled pan over med-high heat, cook for 3 minutes. Add tofu, stir in broth, and increase heat to high. Cook until liquid is almost all absorbed.
  • Add remaining ingredients, stir, and cook for 2 minutes.
  • Add potatoes, stir, and serve.
