Only needed 1/4 cup oil, and i used 2 tbsp cornstarch + 1/4 cup water for the egg replacers. I'm going to try a barley / spelt mix for some of the AP flour next time too. Thanks again!

Wonderful - i did have to up the B. Poweder to 1 tbsp though, maybe it was just the weight of the pumpkin. I bet this would kick butt with apple butter too!
