How to make it

  • Preheat oven to 350.
  • Mix together sugars, oil, applesauce, egg replacer and pumpkin.
  • Sift together flours, spices, baking soda, salt and baking powder.
  • Mix pumpkin mix into flour mix.
  • Fold in chocolate chips and walnuts.
  • Grease and flour two 9x5x3-inch loaf pans.
  • Bake about 1 1/4 hour, until knife comes out clean.
  • Let cool 10 minutes, remove from pan and cool on wire rack.
  • Variations:
  • Substitute carob chips for chocolate, or try mixing in cranberries (fresh or dried) or sunflower seeds.

    wonderful - i did have to up the B. Poweder to 1 tbsp though, maybe it was just the weight of the pumpkin. I bet this would kick butt with apple butter too!
