Ingredients
  • For blondies:
  • 2 3/4 c all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 6 oz. silken tofu
  • 1/4 c soy milk
  • 1/3 c oil
  • 2 c sugar
  • 2 tbsp vanilla extract
  • 1 1/4 c raw macadamias, partially chopped and partially ground
  • For topping:
  • 1/4 c soy margarine
  • 2 tbsp brown sugar
  • 1/4 c maple syrup
  • 1 c raw macadamia nuts, coarsely chopped

Directions
  1. Preheat oven to 350F. Grease 9 X 13 inch pan.
  2. In blender or food processor, blend tofu and soy milk until smooth.
  3. Add oil, sugar and vanilla, blend.
  4. Combine the dry ingredients in mixing bowl, mix well. Fold in nuts.
  5. Dough will be thick. Spread in baking pan, bake 25 minutes.
  6. Prepare topping: Mix all ingredients except nuts in saucepan.
  7. Heat until sugar dissolves.
  8. Increase heat, bring to boil 1 minute.
  9. Stir in nuts, remove from heat.
  10. Remove blondies from oven, pour on topping, bake 10 more minutes.
  11. Let cool completely before serving.
