How to make it

  • You need a big saucepan.
  • Cut the plums in half, half and half again, and put them in the pan with the tomatoes.
  • Chop the onions, apples and raisins with a food processor and add to the pan.
  • Add the ginger, garlic, vinegar, chillis, sugar and salt.
  • Cook on a very low heat (so it just bubbles) for 4-5 hours. You can tell if it ready if you can make a groove in the surface with a wooden spoon, and it doesn’t collapse immediately or fill with vinegar.
