Ingredients
  • 1 ½ lb / 700g plums
  • 1 ½ lb / 700g cooking apples, peeled and cored
  • 1 ½ lb / 700g demerara sugar
  • 225g / 8oz tomatoes, chunkily chopped
  • 8oz / 225g onions
  • 1 lb / 450g raisins
  • 4oz / 110g ginger (chopped or paste from jar)
  • ¼oz / 5g garlic (chopped or paste from jar)
  • 1 pint / 570ml malt vinegar
  • ¼oz / 5g chopped dried chillis
  • ½ tablespoons salt

Directions
  1. You need a big saucepan.
  2. Cut the plums in half, half and half again, and put them in the pan with the tomatoes.
  3. Chop the onions, apples and raisins with a food processor and add to the pan.
  4. Add the ginger, garlic, vinegar, chillis, sugar and salt.
  5. Cook on a very low heat (so it just bubbles) for 4-5 hours. You can tell if it ready if you can make a groove in the surface with a wooden spoon, and it doesn’t collapse immediately or fill with vinegar.
