Bazo Chutney

- 1 ½ lb / 700g plums shopping list
- 1 ½ lb / 700g cooking apples, peeled and cored shopping list
- 1 ½ lb / 700g demerara sugar shopping list
- 225g / 8oz tomatoes, chunkily chopped shopping list
- 8oz / 225g onions shopping list
- 1 lb / 450g raisins shopping list
- 4oz / 110g ginger (chopped or paste from jar) shopping list
- ¼oz / 5g garlic (chopped or paste from jar) shopping list
- 1 pint / 570ml malt vinegar shopping list
- ¼oz / 5g chopped dried chillis shopping list
- ½ tablespoons salt shopping list
How to make it
- You need a big saucepan.
- Cut the plums in half, half and half again, and put them in the pan with the tomatoes.
- Chop the onions, apples and raisins with a food processor and add to the pan.
- Add the ginger, garlic, vinegar, chillis, sugar and salt.
- Cook on a very low heat (so it just bubbles) for 4-5 hours. You can tell if it ready if you can make a groove in the surface with a wooden spoon, and it doesn’t collapse immediately or fill with vinegar.
