Chicken with Rhubarb Sauce

- 4 chicken breasts, boned and skinned shopping list
- 1/2 cup flour shopping list
- 2 tsp. salt shopping list
- 1 tap pepper shopping list
- 2 large eggs shopping list
- 4 rhubarb stalk, chopped shopping list
- 1/2 cup water shopping list
- 3 tbsp honey shopping list
- 1 tbsp cornstarch shopping list
- 1 1/2 tbsp clod water shopping list
- 2 tbsp orange liqueur shopping list
- 1 tbsp lime juice shopping list
How to make it
- 1. Place chicken between 2 sheets of plastic wrap. Flatten with mallet.
- 2. In a medium bowl, combine flour, salt and pepper.
- 3. Place eggs in a bowl and beat lightly.
- 4. Dredge chicken breasts in seasoned flour, then dip in beaten egg.
- 5. In a large skillet, melt butter over med. heat.
- 6. Sauté chicken breast 4-5 min. on each side, until golden brown.
- 7, While chicken is cooking, place rhubarb and water in a stainless steel
- pot.
- 8. Cook over med. heat for 5 min.
- 9. Stir honey into rhubarb.
- 10. In a small bowl, dissolve cornstarch in cole water.
- 11. Stir cornstarch mixture into rhubarb. Cook 1 min.
- 12. Add orange liqueur and lime juice, stirring sauce to combine.
- 13. Place chicken on a platter and serve with sauce.
