How to make it

  • 1. Place chicken between 2 sheets of plastic wrap. Flatten with mallet.
  • 2. In a medium bowl, combine flour, salt and pepper.
  • 3. Place eggs in a bowl and beat lightly.
  • 4. Dredge chicken breasts in seasoned flour, then dip in beaten egg.
  • 5. In a large skillet, melt butter over med. heat.
  • 6. Sauté chicken breast 4-5 min. on each side, until golden brown.
  • 7, While chicken is cooking, place rhubarb and water in a stainless steel
  • pot.
  • 8. Cook over med. heat for 5 min.
  • 9. Stir honey into rhubarb.
  • 10. In a small bowl, dissolve cornstarch in cole water.
  • 11. Stir cornstarch mixture into rhubarb. Cook 1 min.
  • 12. Add orange liqueur and lime juice, stirring sauce to combine.
  • 13. Place chicken on a platter and serve with sauce.
