Ingredients
  • 1 pound lean boneless pork
  • 2 green bell peppers
  • 4 slices pineapple
  • ½ cup cornstarch
  • 3 cups vegetable oil
  • Cooked rice (optional)
  • Marinade:
  • ½ teaspoon salt
  • ½ tablespoon soy sauce
  • 1 tablespoon cold water
  • 1 egg, lightly beaten
  • Seasoning Sauce:
  • 3 tablespoons red wine vinegar
  • 4 tablespoons sugar
  • 4 tablespoons cold water
  • 3-4 tablespoons catsup
  • 5 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon sesame oil

Directions
  1. Prepare ahead:
  2. Pound pork with back of cleaver to 1” thick, then cut into 1” squares. Soak in marinade for at least 1/2 hour. Cut green peppers into halves, remove the seeds and cut into 1” squares. Cut pineapple into 1” squares.
  3. Prepare seasoning sauce.
  4. Cook:
  5. Heat 3 cups oil. Coat pork with cornstarch and brown for 3 minutes or until brown. Remove and drain. Using a wok, use 2 tablespoons of oil, stir fry peppers. Add pineapple, stirring constantly. Add seasoning sauce and stir until it thickens. Add the pork
