Apple Ginger Quick Bread

- 2 cups whole-wheat pastry flour or all-purpose white flour shopping list
- 2 teaspoons baking powder shopping list
- 2 teaspoons ground ginger shopping list
- 1 teaspoon salt shopping list
- 2 large eggs, beaten shopping list
- 1/2 cup brown sugar shopping list
- 1/2 cup vegetable oil shopping list
- 3 medium-size tart apples, peeled and cut into 1/2-inch cubes shopping list
- 1/4 cup apple juice shopping list
- 1/2 cup raisins -and/or- 1/2 cup unsalted mixed nuts (optional) shopping list
How to make it
- Preheat oven to 350 degrees.
- Grease an 8-inch by 4-inch loaf pan.
- Sift together the flour, baking powder, ginger, and salt; set aside.
- Combine the remaining ingredients and blend thoroughly.
- Add the liquid ingredients to the dry ingredients and combine just until blended thoroughly (do not beat).
- Spread into the prepared pan.
- Bake for 80 minutes, or until a tester inserted in the loaf comes out clean.
- Cool on a rack for 10 minutes before removing from the pan.
- Yield: 1 loaf.
