How to make it

  • To make rice pudding: Heat coconut cream in saucepan until it comes to a boil.
  • Add the risotto, coconut flakes and sugar, stir until it once again comes to a boil.
  • Reduce heat to simmer and cook covered, until rice is cooked (about 30 minutes).
  • Check rice from time to time and stir so it doesn’t scorch on the bottom.
  • Meanwhile, put most of berries in separate sauce pan, add water and sugar, bring to a boil.
  • Save a few of the prettiest berries as garnish.
