Coconut Rice Pudding With Raspberry Sauce

- rice pudding: shopping list
- 2 cups coconut cream shopping list
- 6 tbs. risotto rice shopping list
- 3 tbs. sugar shopping list
- 4-5 heaping tbs. coconut flakes shopping list
- Raspberry sauce: shopping list
- 1 cup raspberries shopping list
- 1-2 tbs. sugar shopping list
- 1 tsp. corn starch shopping list
- 1/4 cup water shopping list
How to make it
- To make rice pudding: Heat coconut cream in saucepan until it comes to a boil.
- Add the risotto, coconut flakes and sugar, stir until it once again comes to a boil.
- Reduce heat to simmer and cook covered, until rice is cooked (about 30 minutes).
- Check rice from time to time and stir so it doesn’t scorch on the bottom.
- Meanwhile, put most of berries in separate sauce pan, add water and sugar, bring to a boil.
- Save a few of the prettiest berries as garnish.
