PECAN CRUSTED- CHICKEN WITH BANANA- SALSA

- 3 -cups banana slices shopping list
- 1/3- cup chopped red bell pepper shopping list
- 1/3 -cup yellow bell pepper shopping list
- 2 jalapenos chiles seeded and chopped. shopping list
- 3 tablespoons chopped cilantro shopping list
- juice of 1-1/2 limes.... shopping list
- 1-1/2 tablespoons brown sugar shopping list
- directions.................... shopping list
- combine bananas, bell peppers ,jalapenos, cilantro, lime juice, brown sugar, salt and pepper in a bowl. shopping list
- mix well, let stand for 1 hour or longer for flavors to set ....... shopping list

- 1 egg shopping list
- 1/2 cup milk shopping list
- 1-1/2 cups bread crumbs shopping list
- 1-1/2 cups chopped, toasted pecans shopping list
- 6- boneless , skinless chicken breasts shopping list
- salt and pepper to taste shopping list
- 3 tablespoons Dijon mustard shopping list
- 1/2 cup flour shopping list
- 3 tablespoons vegetable oil shopping list
How to make it
- ********************** chicken**************
- in a medium bowl, beat egg with milk.
- in a separate medium bowl, mix bread crumbs and pecans .
- season chicken with salt and pepper.
- spread with dijon mustard and coat lightly with flour.
- dip into egg mixture, then pecan mixture, pressing to coat well.
- heat oil in a non stick saute pan and add chicken.
- saute until golden brown on both sides, turning only once.
- remove to a baking dish.
- bake at 350 degrees for 15 to 20 minutes or until cooked through.
- note ;............. I serve this with the banana salsa, smashed potatoes and fresh green beans with onions
