Artichoke Mushroom Caps Recipe
ARTICHOKE MUSHROOM CAPS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Richardson, Texas in 2006.

Ingredients
  • 3 ounces cream cheese softened
  • 1/4 cup mayonnaise
  • 6-1/2 ounces marinated artichoke hearts drained and finely chopped
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons finely chopped green onion
  • 25 large fresh mushrooms stems removed
  • 1/4 cup seasoned bread crumbs
  • 2 teaspoons olive oil

Directions
  1. Beat cream cheese and mayonnaise until smooth then beat in artichokes, parmesan and onion.
  2. Lightly spray tops of mushrooms with cooking spray and spoon cheese mixture into caps.
  3. Combine bread crumbs and oil then sprinkle over mushrooms.
  4. Grill covered over indirect medium heat for 10 minutes or until mushrooms are tender.
