Ingredients
  • BUTTOM LAYER
  • 60 g rice flour
  • 230 ml water
  • 40 g cooked fragrant rice
  • 30 g shredded fresh coconut
  • 1/4 teaspoon salt
  • TOP LAYER
  • 200 ml coconut milk
  • 50 g sugar
  • 1/4 teaspoon salt
  • chopped spring onion(green onion)
  • Aebleskiver pan, it can be fine in Thai market.

Directions
  1. Place all ingredients for bottom layer in blender and blitz for 1 minute.
  2. Place all topping ingredients (except spring onion) in bowl and microwave 1-2 minute until sugar is melted (stir upon taking out of microwave.).
  3. Heat the aebleskiver pan over medium heat until hot and then spray with non-stick cooking spray.
  4. Spoon 1 Tbsp of bottom mixture (scoop up from bottom of bowl to catch any coconut or rice bits) into each well.
  5. Let cook for about 3 minutes, covered until set.
  6. Spoon 1/2 tbsp. of topping onto each piece and sprinkle each with a few chopped spring onion, cook a further 2 minute Carefully remove when bottom are crisp and brown.
