Homemade Corn And Tomato Salsa Recipe
HOMEMADE TOMATO AND CORN SALSA This recipe came from an estate sale. I obtained it when I purchased the family collection from the McBride Estate in Austin, Texas in 1994.

Ingredients
  • 2 gallons tomatoes peeled and chopped
  • 5 pounds peeled and chopped sweet onions
  • 2 pounds chopped green bell pepper
  • 3 tablespoons salt
  • 1 cup sugar
  • 1 cup vinegar
  • 2 tablespoons garlic
  • 1 gallon silver queen corn cut off cobs
  • 1/2 cup hot sauce

Directions
  1. Combine tomatoes, onions, bell pepper, salt, sugar, vinegar, garlic, corn and hot sauce.
  2. Cook all ingredients for 1 hour stirring often.
  3. When a red acid rises to the top skim off bubbles and discard.
  4. Cool completely before serving.
