Rich Strawberry Cake Recipe

Ingredients

1 White or Yellow Cake Mix (No pudding kind)

1/2 c. Skim milk (Whole or anything in between is fine)

1 c. Butter (Softened)

1 16 oz. Can Frozen Strawberries (Thawed)

1 3 oz. Package Strawberry Jello

4 Eggs

Frosting:

Either Swiss buttercream with strawberries added OR

1/4 c. Butter

1 lb box Confectioners Sugar

1/2 c. Reserved Strawberries (If you use the juice you might need more p. sugar)

1 tsp. lemon juice

Directions

Preheat oven to 350. Prepare 13x9x2 pan with butter and flour, or the cooking spray for baking. (with flour)

Mix butter with Jello on med. speed just until combined. Add eggs one at a time, until mixed in. The batter will look separated, but will come together with the cake mix and milk. Add those two items, then 1 1/2 c. of the strawberries.

Beat the mixture for 2 mins. on med. speed until lightened in color and fluffy.

Turn mixture into the prepared pan. Smooth top and bake until sides pull from pan and cake is springy when pressed.

Once cooled, mix all frosting ingred. together until mix is desired consist. Pour or spread onto cake.
