This soup is great on a nice cold day. It is very simple to make, but will leave you wanting more.

Ingredients
  • 1 package (8 oz.) tortellini
  • garlic
  • 4 C. uncooked spinach
  • 4 C. chicken broth
  • 32 oz. small cannelli beans
  • 28 oz. diced tomatoes
  • pepper

Directions
  1. In a large pot cook olive oil, garlic, and spinach over medium heat on the stove.
  2. Add chicken broth, tomatoes and bean and bring to a boil.
  3. Then add tortellini and pepper (to taste).
  4. Cook on medium low heat for 60 minutes or cook on low for a good part of the day.
