Creamy Sausage Casserole With Biscuits Recipe
This simple casserole is great for a buffet brunch. It combines all the traditional flavors of breakfast with biscuits. This is great served with a fruit salad and orange juice.

  • 1 (12-oz.) pkg. pork sausage links*
  • 8 Tbsp. margarine
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 1 small can mushrooms, drained
  • 1 (2-oz.) jar real bacon pieces*
  • 1/4 tsp. pepper
  • 12 eggs
  • 1/3 cup evaporated milk
  • 1/2 tsp. salt
  • 1 (12-oz.) can Hungry Jack Golden Layer Refrigerated Flaky Biscuits
  • * Alot of times I'll use a pound of bulk sausage and also fry up my own bacon, using the same pan my flour will go into. At times to, I use the meat drippings instead of the margarine. This gives the gravy a great flavor. Just remember that if you do use drippings from meat, you still need to measure it out to 8 Tbsp.

Directions
  1. Heat oven to 350 degrees.
  2. Lightly spray 13x9-in. glass baking dish with nonstick cooking spray.
  3. Crumble sausage into large saucepan; cook over medium-high heat until sausage is browned and thoroughly cooked, stirring frequently.
  4. Remove sausage from saucepan; drain.
  5. Set aside.
  6. In same large saucepan, melt 6 Tbsp. margarine.
  7. Add flour; stir with a wire whisk until smooth.
  8. Cook over low heat for 1 minute, stirring constantly.
  9. Gradually stir in milk.
  10. Cook until bubbly and thickened, stirring constantly.
  11. Add cooked sausage, mushrooms, bacon and pepper; mix well.
  12. Set aside.
  13. In large bowl, combine eggs, evaporated milk and salt; beat with a wire whisk until well blended.
  14. Melt 2 remaining Tbsp. margarine in large skillet over medium heat.
  15. Add egg mixture; cook until firm but still moist, stirring occasionally.
  16. Pour 1/3 of sauce into sprayed baking dish.
  17. Top with half of egg mixture.
  18. Repeat layers.
  19. Top with remaining sauce.
  20. Seperate dough into 10 biscuits.
  21. Cut each into quarters.
  22. Place biscuit pieces, points up, over sauce.
  23. Bake at 350 degrees for 20-25 minutes or until mixture is thoroughly heated and biscuits are golden brown.
